Italian Chicken w/Tomato-Alfredo Sauce on Angel Hair Pasta

IN THE PHOTOS, I USED ANGEL HAIR NEST PASTA, BUT REGULAR FLAT ANGEL HAIR PASTA IS JUST AS GOOD.   IF YOU LIKE THE EFFECT OF THE "NESTS" , BUT DO NOT HAVE THE PRE-MADE NESTS, COOK THE FLAT PASTA ACCORDING TO PACKAGE DIRECTIONS AND DRAIN. PLACE THE PASTA ON A PLATTER AND DIVIDE INTO SMALL PORTIONS; THEN USE A FORK TO TWIST THE PORTIONS INTO "NESTS".   BEFORE ADDING THE SAUCE, MICROWAVE THE PLATTER OF PASTA FOR ABOUT 1 MINUTE TO RE-HEAT PASTA; THEN POUR ON THE HOT SAUCE AND TOP WITH THE WARM CHICKEN.

4 chicken breasts, partially frozen

Salt

Italian seasoning

Mild sweet paprika

1 T. butter or margarine

3 cloves garlic, minced then crushed

4 oz. cream cheese, cut into cubes, then softened

1-cup milk

3 to 4 oz. freshly grated Parmesan cheese

½ tsp. freshly ground black pepper

4 oz. tomato sauce

Angel hair pasta

Fresh flat-leaf parsley sprigs

 

 

 

Slice the partially frozen chicken into chicken-tender size pieces.  Sprinkle the chicken with salt, Italian seasoning, and paprika.  Using a non-stick skillet, pan sear the chicken to brown the outside; then lower the heat, cover the skillet, and slowly cook the chicken until done. Remove the cooked chicken to a warm plate, set aside, and keep warm.

In the same skillet, slowly melt the butter; then add the garlic.  Cook and stir until transparent.  Add the cream cheese cubes.  Allow cream cheese to slowly melt while stirring.  Then, gradually begin blending the cream cheese with small amounts of milk until the mixture is smooth and all of the milk is used.

Stir in the Parmesan cheese, pepper, and tomato sauce and blend well.

Cook slowly until slightly thickened.

Cook the angel hair pasta according to package directions.  Do not overcook; pasta should be al dente.  Immediately drain the pasta and place on a large platter.  Pour the hot sauce over the hot pasta; then top with the warm chicken.  Add sprigs of parsley to garnish.  Serve immediately since the pasta cools quickly.  Serves 4.
