Matthew’s Favorite: SAUSAGE & EGG W/ CHEESE Breakfast Burrito

I have “staged” this recipe for you to be able to have hot burritos for breakfast. I really dislike burritos that have gotten cold. The recipe should make it EASY for you to accomplish! That is always one of my goals.
6 to 8 oz. bulk sausage, mild or hot
4 large eggs
Salt
½ tsp. olive oil
2 T. green pepper, minced
4 green onions with the green tops, sliced thin
4 T. sharp Cheddar cheese, grated and divided
2 T. salsa plus extra for individual use; bottled, homemade, or fresh refrigerated
1 tsp. butter or margarine
4 (10”) flour tortillas
Cook the bulk sausage using a whisk or a fork until done and crumbled. Drain-off and discard any drippings.
Break the eggs into a small bowl and salt each egg; then beat the eggs and set aside.
Add the olive oil to the skillet and heat; then cook the green peppers and green onions until transparent.
Put some extra salsa into a side-bowl to allow it come to room temperature.
Have the flour tortillas ready to heat in the microwave. If you do not have a tortilla warmer, place the tortillas into a glass pie-plate and cover with another
glass pie-plate to heat in the microwave, but do not heat them until later.
Melt the butter in a large non-stick skillet; then add the eggs, sausage, green pepper, green onion, and 2 T. of salsa. Using medium heat, slowly scramble the mixture until firm. Microwave the tortillas for about 30 seconds while cooking the sausage/egg mixture.
When the sausage/egg filling is cooked, divide it into 4 portions and place one portion in the center of each tortilla. Roll one edge of the tortilla over the filling and slip the edge under the filling; then roll the filled tortilla toward the opposite tortilla edge. Place the burrito
seam-side down on a platter. Repeat with all tortillas. Serve the hot burritos immediately with the extra salsa that can be added, if desired.
