“Lazy Morning” Rolled PANCAKES w/ Fresh Fruit Drizzle

I think that this recipe is quicker and easier than making individual pancakes. It tastes wonderful and has more nutritional value.
Fresh soft fruit of choice – strawberries, blueberries, peaches, nectarines
3 T. granulated sugar plus extra for the fruit drizzle, divided
3 large eggs
1-cup milk (can use 1 %, if desired)
1-cup self-rising flour
2 T. butter or margarine, melted
3 T. granulated sugar
Vegetable oil
Use a small food processor or a fork to lightly puree the fruit, leaving a few small fruit lumps. Sweeten the pureed fruit to taste with granulated sugar; then set aside.
If available, use a bowl with a pouring spout to make the pancake mix. Beat the eggs very well; then beat in the milk. Add the flour and beat until the batter is smooth. Stir in the butter and the 3 T. of sugar until all ingredients are well blended.
Pour a few drops of oil into a 12” non-stick skillet and heat until the oil begins to shimmer. Pour a thin layer of batter into the skillet and reduce the heat to medium. Cook the single pancake until it is set; then turn the pancake to quickly cook on the other side.
When pancake is done, remove to a warm plate to butter and spread with a light coating of the fruit drizzle. Lengthwise, roll the pancake; place the seam-side downward on a serving platter, and top with the fruit drizzle. Repeat making pancakes until all batter is used.
