SOUR CREAM PANCAKES with PECANS

TABLE OF CONTENTS: BREAKFASTS



2 ½ cups plain flour


1 T. baking powder


1 T. granulated sugar


2 tsp. baking soda


1 tsp. salt


3 large eggs


2 cups buttermilk

1 cup sour cream

2 T. butter or margarine, melted

½ cup pecans, chopped (optional)

Canola or vegetable oil for cooking


In a large bowl, sift together flour, baking powder, sugar, baking soda, and salt.

In another large bowl beat eggs; then add buttermilk and sour cream and beat until blended.  Stir in the melted butter or margarine and pecans.

Beat in the flour mixture until well blended.  

I like small silver dollar-size pancakes so the instructions are for small pancakes, but suit yourself on pancake size.

To cook: pour a small amount of oil into a large non-stick skillet; and heat to hot, but not smoking.  Reduce heat to medium-hot; and pour off excess oil into a bowl to use later; leave only a small film of oil in the skillet.  Spoon batter into the skillet to make small pancakes.

Allow pancakes to lightly brown and set on one side before turning to cook the other side.  When cooking the remaining batter, add only 2 or 3 drops of oil to the skillet for each cooking of the pancakes.  Serve hot with any kind of syrup or fruit desired. Serves: 5 to 6.

 

Sometimes we have these pancakes for "Sunday Night" supper.  Thanks, Bub, for doing the cooking for these in the photo.  Five of us left ONE small pancake last Sunday. Mmmmm.
