Toasted SESAME SEEDS w/ GINGER in Stir-Fried GREEN PEAS

Toasted sesame seeds can be purchased in the spice section of supermarkets or you can toast them yourself.

2 T. butter or margarine
18-oz. pkg. small frozen green peas, do not thaw before stir-frying
1 large mild onion, sliced into rings
1 1/4 tsp. salt
½ tsp. Cajun seasoning
2 T. toasted sesame seeds, plus extra to use for garnish

½ tsp. ground ginger

 

 

In a large non-stick skillet on medium-high, melt the butter or margarine.  When melted & hot, add the still frozen green peas & stir-fry.  When peas have cooked 1 minute, add the rings of onion, and continue to stir-fry until green peas & onions are just tender-crisp about 2 to 3 minutes.  Add salt and Cajun seasoning.  Sprinkle with the toasted sesame seeds and ground ginger. Gently mix to blend all ingredients.  Sprinkle the top with extra toasted sesame seeds before serving.
