This is an almost embarrassingly quick recipe to make.  Yet it has outstanding flavor even for the non-spinach lover.  It’s a fresh, healthy vegetable side dish to make in a hurry.  I try to keep a cello bag of fresh, already washed, spinach in the refrigerator for when I’m tired and/or lazy.






Cooking Tip:
Garlic, Peeling: place a whole, fresh, un-peeled clove of garlic in the microwave for 15 seconds.  Remove the hot garlic clove with a fork to a cutting board.  The peel will fall-off when touched with the fork, trim the end of the clove, and mash with the fork. Easy!

Popeye and Pico's - Fresh SPINACH SIDE-DISH

Table of Contents : VEGETABLES

2 tsp. olive oil
1 large clove garlic
1 (10-oz.) cello bag of fresh spinach, already washed
¼ tsp. salt
¼ tsp. garlic powder
2-oz. cream cheese, cut into chunks
2 tsp. Pace’s Pico de Gallo  (other salsas will do)
Paprika
2 or 3 fresh whole radishes, sliced thin (optional)

In a large non-stick skillet, heat the olive oil; then add the microwaved garlic clove and mash.   Cook the garlic until it begins to brown.  Add the whole bag of fresh spinach; reduce the heat and stir until spinach wilts.  Sprinkle spinach with salt and garlic powder and stir.  Add the cream cheese and stir to melt and blend into the spinach.  Stir in the Pico de Gallo (or other salsa) until blended; then sprinkle with paprika to try to improve the color!.  Serve hot in a pretty dish, surrounded with thin radish slices. Serves 3-4.

Good but ugly, although the radishes do help a little.  Popeye thinks it’s absolutely gorgeous and have you checked-out his muscles lately?
