FOUR BARBECUE SAUCE  Recipes for Grilling Meats:

PFEIFFER-STYLE BARBECUE SAUCE

½ cup white vinegar
1 cup water
1 cup butter or margarine
4 T. granulated sugar
2 T prepared yellow mustard
1 large onion, chopped fine
1 tsp. salt
1 tsp. freshly ground black pepper
2 drops Tabasco sauce (more, if desired)
1 ½ lemons, sliced
1 cup catsup
4 T. Worcestershire sauce

 

 

In a saucepan, combine vinegar, water, butter or margarine, sugar, mustard, onion, salt, pepper, Tabasco, and lemon slices, and bring to a boil.  Reduce heat, and simmer for 30 minutes.  Add catsup and Worcestershire sauce, stir, and remove from heat.  Barbecue sauce is used for chicken, ribs, pork, etc.

The sauce is tart and tangy and should be basted on the meat in the last quarter of the cooking time.  Easier yet, leave sauce in the saucepan and dip pieces of meat into the sauce.  Coats very well and saves time.

QUICK BARBEQUE SAUCE

2 cups catsup
½ cup white vinegar
1 tsp. garlic salt
½ cup soy sauce

Mix all ingredients in a saucepan.  Do not cook if using on meat that is being cooked with the sauce on it.  Otherwise, allow sauce to come to a boil; then reduce heat to a simmer.  Cook about 8 minutes.

TANGY-SWEET BARBECUE SAUCE
½ cup catsup
½ cup onion, chopped fine
1 large clove garlic, minced
¼ cup vegetable oil
16-oz. applesauce
2 T. honey
1 T. Worcestershire sauce
2 T. lemon juice
1 tsp. prepared yellow mustard
1 tsp. salt
½ tsp. ground ginger
¼ tsp. freshly ground black pepper
4 drops Tabasco sauce

In a saucepan, mix all ingredients, and bring to a boil.  Reduce heat to a simmer, and cook for about 20 minutes.  Barbecue sauce is for ribs, chicken, pork roast, etc.

WHITE BARBECUE SAUCE by CARLTON

1 pint mayonnaise (do not use Miracle Whip)
2 T. freshly ground black pepper
1 T. salt
6 T. lemon juice
6 T. white vinegar
4 T. granulated sugar

In a medium saucepan, mix all ingredients until smooth.  Use as a basting sauce while cooking meat on an outside grill.  Sauce will keep refrigerated several weeks in a tightly covered glass container.  Barbecue sauce is for chicken, pork or ribs.
