4 large eggs

½ cup vegetable oil

2 cups milk, either buttermilk or regular sweet milk

3 cups self-rising yellow corn meal mix

½ cup granulated sugar

2 cups self-rising flour or plain flour (self-rising flour makes cornbread rise

higher than in the photo & makes it very light)

Spray oil

 

 

 

 

 

Preheat oven to 400 degrees.  In a large bowl, beat the eggs very well; then add the oil and milk.  Beat to blend.  Gently beat in the cornmeal and sugar until well combined.  Finally, stir the flour into the mixture until all ingredients are all completely mixed.

 

Spray oil a 9’ X 13” baking pan; then pour the cornbread mixture into the pan and spread evenly.  Bake in the preheated oven for about 40 minutes or until risen and golden brown.

 

There are as many different cornbread recipes as there are cooks making it.  Trish made this one, and I liked it so much that I asked her to submit the

recipe for everyone on my website, Facebook, and Pinterest to enjoy.  The recipe definitely makes plenty of cornbread to serve and bakes into a beautiful

“pan of bread” as the old Southern saying goes.


Trish grew up in North Carolina with this recipe as her family’s favorite.  It has a small amount of sugar in it, but is only slightly sweet; it rises high; and

smells divine when it is cooking, not to mention the outstanding taste and texture it provides.  It is perfect with almost any meal and particularly good

with soup.
