Please read this before beginning to make the cake.  Use only the pouch of dry cake mix from the package.  Ignore the ingredients the package instructions call for and substitute my ingredients listed below.  My downfall is NOT reading my own instructions.  I just rip into it,

and then have to back up.  For some reason, this greatly amuses my husband that I’m banging around the kitchen grumbling at myself!  It is easiest for me to just note the oven baking temperature; then throw away the package.  Out of sight; out of mind!

 

CHOCOLATE IRISH CREAM Cake w/ IRISH CREAM Frosting

1 (15.25-oz.) package Pillsbury dark chocolate cake mix w/pudding in the mix

1 (3.9-oz.) package instant chocolate pudding mix

½ cup water

½ cup vegetable oil

½ cup Baileys Irish Cream

4 large eggs

 

Frosting Ingredients:

¼ cup butter or margarine, softened to room temperature

1 lb. confectioners’ sugar, sifted

½ cup Baileys Irish Cream

½ tsp. lemon juice

1/8 tsp. salt

¼ to ½ cup real chocolate semisweet morsels for garnish

1 to 2 T. brown sugar for garnish

 

 

 

 

 

Cake: Preheat oven according to the cake package instructions.   Use a Bundt cake pan or a deep, round cake pan with a center hole.  Spray with Baker’s Joy.

 

In an electric mixer, add all of the cake ingredients to the dry cake mix from the package.  Begin beating at a slow speed until all ingredients are mixed; then increase speed to medium and beat for 4 minutes.

 

Pour the batter into the prepared cake pan and cook in the preheated oven for about 30 to 35 minutes or until the cake tests done.  Allow cake to cool for 20 minutes before turning out of pan onto a wire rack.  Cool completely before frosting it.

 

Frosting: In an electric mixer, begin creaming the butter with the confectioners’ sugar; then gradually add the Baileys Irish Cream.  Beat in the lemon juice and salt until all ingredients are well blended.  Pour the frosting over the top of the cooled cake.

 

To garnish the cake, very lightly sprinkle a single line of brown sugar in the center of the top of the cake.  Then, dot the top of the cake with a few chocolate chips in an attractive design.
