Stars & Stripes - TRIFFLE Dessert  - for PRESIDENTIAL ELECTION DAY  &  for the 4TH of JULY

Table of Contents: DESSERTS

Place the electric mixer bowl and the beaters in the refrigerator or freezer to chill.

1 box of a solid white cake mix

10 oz. heavy whipping cream, keep cream very cold until ready to whip

8 oz. cream cheese, very soft

1-cup confectioners’ sugar

½ cup granulated sugar

1 tsp. lemon juice

24 oz. fresh strawberries

24 oz. fresh blueberries

Measure the inside size of the trifle bowl to be used.  This measurement will determine the size of cake pan or pans to be used for baking.   It is possible that one 9” X 13” baking pan will be easiest to use to yield the 2 cake layers to fit the trifle bowl.   Using scissors, cut a paper plate as a template for the inside measurement needed.  If the trifle bowl is graduated, cut 2 paper plate templates.  Don’t “wig-out” this is not rocket science and does not have to be a perfect fit!

Make the white cake according to the package directions.  Allow cake to completely cool after baking before cutting it.

After the cake is cold, use the paper plate templates to cut the cake layers to fit the trifle bowl.   Then, slice a thin layer from the top and the bottom of both cake layers.  Thus removing any brown color from the cake layers and leaving only the white color on the cake.  Discard the brown layers.

Hull the strawberries; then wash and drain.  Reserve about 8 whole strawberries for the design to be made on the top of the dessert and set them aside.  Slice the remaining strawberries.  Remove any stems from the blueberries; then wash and drain.   Set fruit aside.

Using the cold electric mixer bowl and beaters, whip the cold whipping cream until stiff; then add the very soft cream cheese, confectioners’ sugar, granulated sugar and beat only long enough to make the mixture smooth.  Add the lemon juice and beat only to blend.

Make layers in the trifle bowl:

1. Thick layer of blueberries

2. Thick layer of sliced strawberries

3. One layer white cake

4. Thick layer of cream cheese mixture

5. Repeat layers

6. Top the second layer of the cream cheese mixture with a design made of

cut strawberries, whole strawberries, and blueberries

7.  Cover and refrigerate until completely cold before serving

8.  Keep covered and refrigerated when not serving

Nibble, discard, or make little “cake-piece desserts” with the remaining pieces of cake.   Joe found my cut cake-pieces and ate some with a glass of milk.   That solved my “cake-pieces” dilemma!

After visits to various countries around the world, it is easy for me to appreciate this marvelous country in which we live!  There is NONE other on the face of this old globe that can compare!  Voting Day and the Birthday of THE UNITED STATES OF AMERICA should be about both silent, private thanks and verbalized thanks of appreciation for a unique country and a unique form of government.  My very special, heart-felt thanks go to the men of such uncommon wisdom that created our country and to their guiding hand.  Please VOTE.
