Aztec APPLE PIEÂ - an apple Dessert made w/ tortillas

Dessert:
4 large Granny Smith apples
1 T. lemon juice
2 T. plain flour
1 packed cup light brown sugar
ÂĽ tsp. cinnamon
8 oz. cream cheese, very soft
¾ cup confectioners’ sugar
½ cup chopped pecans
10 (8-inch) flour tortillas

Topping:
2 T. granulated sugar
ÂĽ tsp. cinnamon
Coarsely sliced whole pecans for garnish
1 stick (1/2 cup) butter or margarine, melted

To Make Dessert:
Spray-oil a 3-quart flat, rectangular baking dish.
Â
Peel, core, and thinly slice the apples.  In a large skillet, stir together the lemon juice and flour; then add the apples, brown sugar, and cinnamon. Blend all ingredients. Heat the apple mixture to high; then reduce to simmer, and cover the skillet with a lid. Cook the apple mixture until very soft; then mash the apples with a fork into bite-sized pieces.

In a bowl, mix the cream cheese with the confectioners’ sugar until smooth; then mix in the ½ cup of the chopped pecans.

Put an even amount of the cream cheese mixture on each tortilla. Spread the cream cheese mixture over the surfaces. It will not cover, neatly; no problem. Then, repeat the process with the apple mixture over the cream cheese mixture. Roll the tortillas and place with the seam-side downward in the baking dish.

To Make Topping:
In a small bowl, mix the granulated sugar and cinnamon.  Sprinkle the sliced pecans for garnish across the center of the rolled tortillas; then evenly pour all of the melted butter along the entire top surface of all of the tortillas. Sprinkle the tops with the sugar and cinnamon topping mixture.

Bake, uncovered, at 350 degrees for about 20 minutes. Serve warm.
