CHICKEN & Sun-Dried TOMATO APPETIZER SPREAD

TABLE OF CONTENTS: APPETIZERS

1 ½ cups chopped, cooked chicken, that has been salted during cooking

1 sun-dried tomato

½ small onion, finely diced

4 T. mayonnaise

1 tsp. tarragon vinegar

½ tsp. freshly ground coarse black pepper & more for garnis

Taste for salt & add, if needed

1 Baguette loaf or crisp crackers

 

Cut the sun-dried tomato into very small, thin strips.   In a glass bowl, mix all ingredients except the Baguette loaf or crackers.  Cover the bowl, & refrigerate for

several hours to overnight before serving.  This allows the flavors to blend.  Slice the Baguette loaf into thin slices & toast.  If the Baguette is toasted ahead of

serving time, place the toasted slices into an airtight container until serving time.  Serve the spread on the toasted baguette slices or on crackers.
