This is a great “emergency” appetizer to keep in the freezer for impromptu entertaining.

It only requires some thawing time and crackers to serve.

16-ozs. Salmon in foil package (slightly more or less is o.k.)

8-ozs. cream cheese, softened

1 T. lemon juice

½ tsp. salt

4 T. Spanish purple onion, minced

½ cup chopped pecans, extra for garnish

3 T. fresh flat leaf parsley, minced; extra for garnish



I prefer the taste of this appetizer when made by hand.  I have also made it with a food processor, and it makes more of a pate consistency.  It is still very good, but I miss the crunchiness of the pecans & onions.  Mix all ingredients, except the extra pecan and parsley for garnish, until well blended.  Cover and refrigerate for several hours until the mixture is firm.  After firming up, the appetizer can be served in a pretty bowl topped with chopped pecans & minced parsley.  Or, formed into a ball or into logs and rolled in chopped pecans mixed with minced parsley.  If refrigerating, cover with plastic wrap and aluminum foil.  If freezing, wrap in plastic wrap; then aluminum foil and place in a zip-lock bag and seal.
