Baked Fresh FISH FILLETS w/ Sweet RED PEPPER, TOMATO, & ONION Rings

Salt
Freshly ground black pepper
2 lbs. fresh mild, white fish fillets (either fresh or salt water fish - such as crappie, red snapper, trout, grouper, tilapia, red fish, etc.
½ cup mayonnaise
1 medium to large mild onion, thinly sliced in rings
1 medium to large fresh tomato, thinly sliced
1 large sweet red pepper, thinly sliced in rings
2 T. lemon juice
Paprika
3 T. butter or margarine, diced

 

 

Preheat oven to 350 degrees.  Prepare a 9 x 13-inch baking dish with stray-oil.  Generously salt & pepper both sides of fillets, and place in dish.  Spread the mayonnaise evenly over the tops of the fillets.  Layer each fillet with sliced rings of onion, tomato, & sweet red pepper in an attractive design.  Sprinkle fillets evenly with the lemon juice; then sprinkle with paprika for color.  Dot with the butter or margarine.  Bake, uncovered, in the preheated oven for 20 to 30 minutes or until fish flakes easily & is a white in color.
Baste the fish fillets several times with the juices.
