Spiced GRILLED OKRA – A Healthy APPETIZER or SIDE DISH

Fresh tender whole okra
Extra virgin olive oil
Select a seasoning of choice: 1. Tony Chachere’s Original Creole Seasonings
2. Cavender’s Greek Seasoning
3. Salt and Freshly Ground Black Pepper
Do not cut the stems from the okra pods. Carefully wash the whole okra pods preventing any breaks in the pod; then gently pat dry with paper towels.
Pour olive oil into a flat pan and gently roll the okra pods in the oil to lightly coat the outside of the okra.
Sprinkle the coated okra pods with a seasoning of choice.
Heat an outside gas or charcoal grill to 275 to 325 degrees. Take note that the cooking time is critical. Cooking longer than 4 minutes will breakdown the okra pod. When the cooking temperature is right, place the okra pods on the grill. Gently roll the pods around on the grill for only 3 to 4 minutes; then remove okra to a warm plate to serve.
This is a unique way to serve fresh okra as an appetizer. And, how often do you find a “healthy appetizer”? They are as scarce as “hen’s-teeth”! It can, of course, also be served as a side vegetable with dinner. Thanks, Mel, for sending this fantastic recipe and thanks also go to Rolfe & Helen.
