My mother would have hated this recipe!!!  That is, unless she’d actually tasted it! Any kinds of beans were not for her.  Consequently, we never were served beans.  Such was my childhood deprivation, somehow I don’t think that rises to Dickensonian levels, but I digress… I happen to like most beans and really love this very versatile recipe as does my granddaughter, Hillary and her new husband Ben.
Serve it as a cold appetizer with tortilla chips.  I like to use “Scoops” because they hold the most “goodie” on the chip without breaking and falling into my cleavage (so much for the “Sex In The Country” series).
Serve it warm with tortilla chips when it’s cold outside.
Serve it as a vegetable soup meal by cooking the recipe over medium heat for 15-20 minutes and serving over hot white, brown, or yellow rice.
Serve it as a meat soup meal by cooking it with chopped, cooked ham or pork chunks.
As I said this is very versatile – I’m sure you could add an ingredient or two, such as a dollop of sour cream or ???  Go for it.


1 (26.5-oz.) black beans, undrained
1 (10-oz.) can Ro-Tel Original diced tomatoes & green chilies,undrained
1 (15.25) can whole kernel corn, drained
1 small mild or Spanish purple onion, finely chopped
1 sweet red pepper, diced
½ tsp. freshly ground black pepper
½ tsp. garlic salt
Salt, to taste
Banana pepper rings (optional)
2 to 4 T. extra virgin olive oil, more if needed
1 to 2 T. cider or red wine vinegar, more if needed


For a soup, see above instructions.  For a salsa, see below instructions:
In a large glass bowl, mix all ingredients until well blended.  Taste for seasonings and add as needed.   Cover the bowl tightly, and refrigerate for several hours to allow the seasoning to blend.  Taste again and adjust seasonings, if needed.  Serve with plenty of tortilla scoop-type chips.

When you serve this, don’t tell anyone - but this is pretty healthy – vegetables, beans, olive oil.  As I may have said earlier, black beans are my favorite beans
