“Worry-Free Ranch Dressing”

(The recipe immediately following is from the book, Wheat Belly, by William Davis, M.D):

 

1 cup sour cream

½ cup mayonnaise

1 T. white vinegar

1 T. water

½ cup freshly grated Parmesan cheese

1 ½ tsp. onion powder

1 tsp. garlic powder

Pinch of sea salt

 

Slaw:

1 (12-0z.) package shredded broccoli slaw (containing at least broccoli, carrots, & red cabbage)

½ tsp. salt

¼ tsp. Tony Chachere’s Original Creole Seasoning

½ cup halved cherry tomatoes, plus extra halves to use for garnish, if desired.

4 to 8 fresh or frozen white fish fillets, depending on size of fillets

Salt

Freshly ground black pepper

1 medium onion, finely chopped

4 T. butter or margarine

8 oz. sour cream

½ T. fresh dill weed, plus extra for garnish, or ½ tsp. dried dill weed

2 scallions with green tops, sliced thin

Paprika

This pie is best made the day before serving.  It cooks for a long time, and then it requires refrigerator time to get cold and firm before serving.

 

COOKING TIP: Bake the piecrust on a preheated pizza stone or baking pan placed on the lowest oven rack.  After cooking, place pie on wire rack to cool.

 

½ package (1 piecrust roll) refrigerated already-prepared piecrust

4 oz. (½ cup) of dried mixed berries (cranberries, blueberries, & cherries)

1 lb. small curd cottage cheese

8 oz. cream cheese, softened

3 large eggs

1/3 cup granulated sugar

½ tsp. salt

2 T. butter, melted

3 T. lemon juice

½ cup pecans, chopped; additional un-chopped berries can also be added for garnish

Easy CROCKPOT Teriyaki CHICKEN w/ Rice

If you are in a hurry when preparing this recipe, wait to cut the chicken into bite-sized pieces until after the full cooking time.  If using this method, cook an additional 5 to 10 minutes after cutting the chicken.

 

3 lbs. boneless, skinless chicken thighs, washed and drained

2 medium onions, peeled and quartered

4 green onions w/ green tops, coarsely sliced

2 cloves garlic, halved and crushed

6 T. Teriyaki sauce

3 T. cooking sherry

1 tsp. ground ginger

½ tsp. salt

½ tsp. crushed red pepper

Cooked white rice

2 to 3 lbs. boneless beef short ribs, removed extra fat

Salt

Freshly ground black pepper

1 T. extra virgin olive oil

½ cup apple cider vinegar

¼ cup molasses syrup

½ cup Dijon-style mustard

4 t. Worcestershire sauce

1 large onion, chopped

1 clove garlic, minced

2 T. chopped parsley

1 (12-oz.) package baby carrots

Baked potatoes or cooked rice, if desired
